JOB SUMMARY
Responsible for the day-to-day operations of the restaurant which also includes the bar, lobby lounge, room service and the pool restaurant. Manages within the overall policies and controls established by the Company, ensuring guest/teammates satisfaction, brand values and standards are delivered, and profitability is achieved.

EXPERIENCE

  • Minimum of 10 years’ manager, supervisor, or outlet manager in a restaurant environment in a similar size operation.
  • This position requires previous experience in food and beverage management with a documented history of no less than 10 years’ experience as a manager, supervisor, or outlet manager in a restaurant environment.
  • Good working knowledge of accepted sanitation standards and Health Codes for the State of Hawaii and excellent working knowledge of accepted and required HACCP standards.
  • Certifications and/or training in food and beverage management programs such as responsible alcohol service, sanitation training and leadership training are highly desirable.
  • Accurate cash handling/credit card and billing knowledge.
  • High school education and relevant training and experience required.  Additional education preferred.
  • Experience with Micros Point of Sale system.
  • Servsafe certified.
  • Strong customer service skills
  • Ability to workdays, nights, weekends, holidays
  • Must have a comprehensive knowledge of all hotel departments and functions.
  • Must have a comprehensive knowledge of applicable Federal, state, and local health, safety, and legal regulations.
  • Ability to timely obtain any required licenses or certificates.
  • Excellent verbal and written communication. Must be able to convey information and ideas clearly.
  • Must be able to motivate associates in a positive manner.
  • Must be computer literate, IE: Word, Excel, E-mail.
  • Detail-oriented, ability to handle multiple priorities in a fast-paced environment.
  • Strong supervisory, managerial, development & coaching skills.
  • Excellent leadership skills demonstrating adaptability, flexibility & team orientation.
  • Strong ability to exercise sound judgment in evaluating situations & making decisions.
  • Ability to deal with internal & external customers of diverse social backgrounds with patience, tact & diplomacy to defuse anger and resolve conflict.

CORE RESPONSIBILITIES

  • Oversees dining room, lounge, beverage/bar and room service operations for both day and night operations.  Manages day-to-day operations, ensures all standards are meeting and exceeding guest expectations and financial profitability on a daily basis. 
  • Responsible for overall guest satisfaction and necessary follow-ups. Ensures F&B Supervisory/Management is handling/resolving guest complaints/issues which may involve investigating and resolving food quality and service complaints, monitoring guest satisfaction surveys, comment cards, emails, letters, phone calls. Ensures corrective action is taken to improve service. Serves as the role model for Legendary Guest Service.  Creates a positive atmosphere for guest relations. 
  • Processes Food and Beverage invoices and forward to AAH Accounting department. Follows up when needed.
  • Maximizes profitability by ensuring portion control and monitoring accuracy of charges.  Reviews daily financial transactions and monitors budget to ensure efficient operation, and to ensure expenditures stay within budget limitations. Participates in monthly food and supply inventories as directed. Participates in monthly P&L critique meetings.
  • Manages Food & Beverage Supervisory/Management and teammates. Performs Human Resources functions including but not limited to recruiting, selecting, orienting, training, assigning, scheduling, coaching, counseling, and disciplining teammates; communicating job expectations; planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions; and enforcing policies and procedures. Encourages teamwork, respect and professionalism.  Develops effective shift strategies and ensures supervisory/management teammates performs daily, informative shift meetings.  Ensures on-going F&B training (i.e. Food Safety, Food Handlers, TIPS, Micros, Cash Handling and FOH service training) is performed for teammates.
  • Ensures Supervisory/Management teammates perform administrative responsibilities to include, but not limited to cash accountability and cash management, inventory control, scheduling, payroll and personnel actions, in a timely and accurate manner. Approves all weekly time sheets /payroll, purchase orders, and invoices. Provide reports on the food and beverage department on a weekly basis or as requested.
  • Maintains a safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with legal regulations; securing revenues; developing and implementing disaster plans; maintaining security systems.
  • Responsible for the development and implementation of creative strategies to increase revenues and average check amounts.
  • Participates in property meetings and teammates functions as required.
  • Performs other duties as assigned.

SUPPORT

  • Must have a comprehensive knowledge of the English language to effectively communicate with guests, associates, and vendors.
  • Ability to assist with the design and preparation of statistical reports and presentations as needed.
  • Ability to accurately report information.
  • Ability to assist with various accounting and office tasks as needed.
  • Ability to scrupulously follow all hotel policies and procedures.
  • Attend required meetings.
  • May have miscellaneous duties assigned.

OTHER

  • Regular attendance in conformance with the standards, which may be established by Aqua Aston Hospitality from time to time, is essential to the successful performance of this position. Teammates with irregular attendance will be subject to disciplinary action, up to and including termination of employment. Due to the cyclical nature of the hospitality industry, teammates maybe required to work varying schedules to reflect business needs of the hotel.
  • Upon employment, all teammates are required to fully comply with Aqua Aston Hospitality rules and regulations for the safe and efficient operation of hotel facilities. Teammates who violate Hotel rules and regulations will be subject to disciplinary action, up to and including termination of employment.
